WINE CONNECTION: CHAINE DES ROTISSEURS GALA DINNER
Wine Connection: 

Premier Gastronomic Society Chaine des Rotisseurs, Thailand Chapter recently held an exclusive Gala Dinner at the Plaza Athénée Bangkok, A Royal Méridien Hotel to welcome new members and award outstanding participants.

After an induction ceremony, the Association's President Joe Prasobsook Thawilvejjakul led some 70 distinguished guests and friends through the enjoyment of a pop-up dining experience. This year's theme incorporated the notion of fun-filled travels throughout different places within the hotel through the art of cuisine superbly executed by Executive Sous Chef Thibault Chiumenti along with Chef de Cuisine Daniel Bucher. 
The poolside garden was an ideal venue to start of the evening with a moment of Champagne delight along with some tempting canapés. Guests then moved on to a modern  French restaurant called the Reflexions to indulge in the first two courses. First was a 'Rougie terrine/ cherry /  Peter heering/bitter almond'. The following was an  edible paper made with fresh lime and lemon, served as a short introduction to the next dish. Second course was a 'Japanese diver scallop / citrus fish fume / peas and snaps/ grapefruit', brilliantly cooked  with all the freshness of the sea and  made flavourful with variety of citrus ingredients
A 'Lavender poached trout / wood chip smoke / charcoal' was  actually served in the foyer of one of the kitchens.  Upon leaving, guests  playfully 'injected' themselves with a syringe of Mirabelle French plum with saffron,  a fun gimmick that also  refreshed the palette. The delicious main course, 'Spit roasted quail/ polenta/ forest mushrooms' was served in the hall of Athenee Tower on two long elegantly set up tables.  To follow, was a 'Goat and lavender honey  tube / exploding comte / mesclun', a variation of cheese in a modern presentation: cheese paste in a tube, an exploding cheese ravioli and a blue cheese mousse. The last station to close the evening was in the grand Ratanakosin Suite. Guests were treated to all kinds of desserts delicacies spreading out  in different rooms. Adding to the fun were an array of edible bathroom amenities such as sable biscuit  
Chaine des Rotisseurs is an international gastronomic society originating from France, with a history dating back to the 13th century when it was first established under French King Louis IX. The revival of the association took place in 1950 to follow the former's spirit in honouring the heritage of fine cuisine and promoting the artful culture of fine dining. The Thai Chapter of Chaine des Rotisseurs was established in 1974 with Rear Admiral M.L. Usni Pramoj elected as the first Bailli Délégué or the President of the association. A highly anticipated 40th anniversary celebration is set for 2014.
